Wholewheat Ragi Pancakes


Hola people!

Life has been busy. My little squirrel is growing up too fast and has started playschool (big milestone right? Phew!). The settling period is on and most days she sails through the time managing a few wails towards the end. My heart feels so heavy but I do realize that it is all part of a process.  

Soooo, with her playschool I had to introduce some lifestyle changes in my routine too. I wake up early now, prepare breakfast (duty calls) and then wake her up followed by bathing, feeding and dressing her up (oh dear mothers, you know the grind!). Anyway so my stories are really pancaked these days. I have been preparing pancakes for adira for breakfast before she goes to school. Ofcourse I feed her different things on different days but only the pancakes make it to my stories (who want to see besan ka sheera on the story board right?). A lot of you messaged me asking for the wholewheat-ragi pancake recipe.


Now I have two versions of it; with egg and eggless. I will share the recipe of both. Though there is just a minor change. I haven’t clicked a decent picture of the pancakes so a screenshot of the boomerang from my insta story will have to suffice for the moment.

Egg Muffins


Just yesterday, when I had posted a story about egg muffins, I got flooded with messages for its recipe. Well this just gave the lazy writer in me a nudge to switch on the laptop and fill in another page of my little diary.


Egg muffins generally occupy the breakfast menu but because I tried these for my little one and there is no set menu for toddlers, I served it to her for dinner. My husband suggested that it will make a filling snack for his evening hunger pangs. It is unbelievably easy to make and is very healthy.

Healthy Homemade Cookies For Kids and Everyone


                                               

I have always loved baking. However, I have also been moody with it. For example when I got married I baked a lot for the family. I baked for my husband on every special occasion ( check out my strawberry cupcakes from one Valentine’s Day). 

With adira in our lives now I have been so busy doing the mundane chores that my other hobbies had taken a backseat. But I am glad that I am back to doing those things again. Ofcourse not at the same pace but I am definitely doing them again. 

Baking is one of those things. I don’t bake everyday anyway but I had completely left it for a while. 

Contrary to my excuse for not baking, now adira is my reason to bake. You know how kids love biscuits. Also, biscuits come to our rescue when out for dinner or in a public place to keep these toddlers occupied. No, I am not proud of handing her a biscuit every time. Rather a lot of times I carry fresh cuts of cucumber/carrot/apple/pear. But sometimes these kids just need a biscuit.

Easy Eggless Choco-Raisin Oat Cookies

There is something so mischievous about midnight cravings. First they make you dream about that particular food till you die of salivating. Then it leaves you with no choice but to kneel down and surrender to it (read: rush to the kitchen). Arghhhh!!!

I was a victim of one such teasing midnight craving the other night. The crime took place at 1:30 AM, crime scene being our kitchen. My husband and I had just returned from our friend’s place and I had a full tummy yet I wanted to have some cookies and tea.

Eggless Wholewheat Apple Cinnamon Cake



So…yesterday I got a reason to bake again (though I do not really need one :p..I love it anyway). It was my father-in-law’s (FIL) birthday. 

As kids all of us always chose the cake of our choice; chocolate or pineapple, decorated with a doll, a car or the epic pair of bat and ball. Now with the evolution in cake baking, as adults boy don’t shy away from bottles of wine with bikini clad women at the pool and girls love to adorn their piece of cake with Louis Vuittons, pair of heels and the little black dress. The gist of all this is that a birthday cake is all about customization.

Eggless Strawberry Cupcakes

When a special day is approaching (read: birthday, anniversary or Valentine’s Day) and it comes to doing things for my dear husband my mind gets to work like a week prior to the main day. Since Valentine’s Day just went by allow me to talk about that.

I have often heard people excusing themselves from Valentine’s Day saying “oh we don’t believe in this stupid day, after all every day should be celebrated like Valentine’s Day and one should make his/her partner feel special every single day”.  And my husband is one of those people (eyes rolling!) But really who are we fooling? You tell me, with all the life’s madness do you really get time to shower your partner with love, adoration and little gestures every day (if you are one of those then I would like to tell your partner how lucky he/she is)? Even a cheesy romantic like me who surprises her husband with his favourite cookies and his favourite dish or breakfast on random days fail to make everyday special and exclusive.

So Christmas came and went. We welcomed it on 24th midnight and made it merry in our own Punjabi way over a get together with family and friends. 25th day was quite usual, however I did plan to make the evening special by baking a cake. Afterall, what is Christmas without the sweetness of a home-baked plum cake right?

tutti frutti almond biscuits


It was our first wedding anniversary on Monday. I had planned a midnight Sunday surprise for my husband. A post dinner coffee with greeting cards hanging from the ceiling and the entire place lit with candles and the room filled with the fragrance of fresh flowers. I planned to bake him crispy tutti frutti biscuits that he could enjoy dunking in his cup of tea or coffee.

mac & cheese



My husband is crazy about cheesy stuff. No by that I do not mean that he is romantically cheesy but he likes food that has loads and loads and loads of cheese (*eyes rolling*). He loves cheese to the extent that he orders for a cheese-burst pizza with some extra cheese on it. He often surfs the net to find out new recipes and generally ends up liking the ones that require a generous helping of cheese. A few days back he shortlisted the traditional macaroni and cheese commonly known as mac & cheese as one of the dishes he would like to try on a weekend.

jam cookies



The other day my husband and I had gone to a nearby place for coffee. It is a cafĂ© cum bakery. While I was choosing a muffin to have with my cup of coffee my husband’s eyes fell on the jam cookies displayed at the counter. They were sitting in a tall glass jar and looked beautiful with that spoonful of round jelly like jam in the middle. My husband said “they look so tempting”. To this I asked him “should we buy some?” “No, not now” he replied back. I wondered “why not?”

chocolate chunk mocha cookies


Somehow my husband is not very fond of the biscuits available in the supermarket, not even oreo! (How can anyone not be fond of oreo? :S). When it comes to bakery biscuits he likes only a few. So buying biscuits for him is a task. However, to my respite, he simply loves the freshly baked home cookies. Now, I have always enjoyed baking. So this weekend, while I already had muffins on my mind my husband asked me to bake some cookies instead. Without giving it a second thought I said “cookies it is then!”
